Catering a 50th Birthday party today and the request was to do a Hawiian themed dinner. One of the specific requests was for kalua chicken. Basically its the same thing as kalua pork but using chicken instead. The only issue I had was that I was not willing to dig a giant pit in my yard to prepare it authentically and my neighbor was not to keen on me bringing my shovel to his house. I also didnt have a banana tree to harvest the leaves from for wrapping the meat so i decided to slow cook it in the oven but knew it would be missing some key flavor components. Luckily, my good friend Jim Crawford mentioned a great idea to get really close to the flavor profile. I threw in a dozen green tea bags along with the smoked hawiian sea salt and a bit of garlic, and in the oven it went. I tested the flavor this morning and I must admit, it tasted about as authentic as I could get without wrapping it in banana leaves. Great Suggestion Jim.
