“Cheese-Guy” Marc Bates to teach a one-day Value Added Dairy course targeted to dairy producers and artisan cheese makers. Expert Marc Bates of Bates Consulting LLC. has been a treasured resource among dairy producers and artisanal cheese makers for many years. Many award winning cheesemakers in Oregon or Washington say they learned their craft from Marc. In this workshop, Marc will cover the basics of what it takes for small to mid-scale production of value added dairy. Marc will provide some in-depth information on vat pasteurizer design and operation, food safety (i.e. HACCP plan, sanitation, etc.) and other regulatory requirements. The day will include lunch and end with a tasting of some innovative new dairy products and a discussion about market trends and quality attributes.
