Cheesecake in a glass Ever had cheesecake poured from a glass? Well, now you can…in the comfort of your own home. Ingredients Serves: 10 Cream cheese (room temperature) 575 g Lemon zest of 1 lemon Sugar 165 g Honey 15 g Sour cream 150 g Gelatine sheets, softened in water 10 g Fresh cream 190 g Goat cheese 100 g Blueberry compote 150 g Orange segments of 2 oranges Crushed cookie crumbs 2 nos A pinch of salt Method Melt the honey, sour cream and salt over a water bath and stir until the mixture is warm and smooth. Now remove from the heat and add softened gelatine to the warm cheese mixture. Let it cool till it reaches room temperature. Whip the fresh cream to soft peaks and then transfer it to another bowl. Now without washing the mixing bowl, add cream cheese and some lemon zest directly on top. Using a paddle, beat the cream cheese with the remaining lemon zest, goat cheese and sugar until light and fluffy. Combine this goat cheese mixture with the cream cheese mixture. Fold in half of the whipped cream to lighten the mixture. Place this mixture into piping bags and chill it in the refrigerator to set. Assemble as shown in the picture with orange segments and cookie crumbs. Pipe the Cheese cake mixture and top with blue berry compote. To assemble the dish Cut the orange slices in vertical segments and put them on top of the layer of cookie crumbs. The orange segments enable the dessert to slide out easily giving a gentle push while pouring the cheesecake out. Now, add the blueberry compote. Then pipe the cheesecake mixture on the plate and add a coconut cookie or an Oreo cookie as garnish. It’s ready to eat! It’s quick and easy, and you can make it instantly.
