Summarizes and explains P&L of variances. 2.Participates in monthly inventory of all Food and Beverage outlets and enters data into system for tracking. 3.Control food costs and establishes purchasing specifications; storeroom requisitions systems, product storage, portion control, and waste control. Maintains accurate order guides with updated par levels. 4.Maintains time and payroll records for kitchen operations and verifies accuracy at end of each payroll period. 5.Maintains office services by organizing office operations and procedures. 6.Review staffing levels to maintain budgeted levels of employment. Check and schedule staff to operate at peak efficiency at all times, calls in additional personnel in emergencies, authorizes overtime if warranted by unexpected business or dismisses them earlier if business is slow, being careful at all times to conserve labor costs. Delegate authority and assign responsibilities. 7.Developing staff, interviews, hires, and evaluations. 8.Attempts to strengthen knowledge of operation at all times, not only pertain to production but also management. Observe and enforce objectives, policies, standards, and procedures as set forth by the Director of Food and Beverage, along with the Food and Beverage Operations Manager. 9.Insists on personnel cleanliness and proper deportment of all employees under his/her supervision or working areas under his/her supervision. He/she keeps a close watch over all materials used with a view for eliminating waste and spoilage. Assures that soiled or damaged serving utensils are not put to use. Also checks all ice boxes to be certain that foods are properly rotated. 10.Responsible for all kitchen personnel in regards to instruction on cooking and preparing foods. Trains kitchen personnel in safe operating procedures of all equipment, utensils, and machinery. Establishes maintenance schedules in conjunction with manufacturer’s instructions for all equipment. Provides safety training in lifting, carrying, hazardous material control, chemical control, first aid, blood borne pathogens, and personal protective equipment. 11.Assumes responsibility for any kitchen position in absence of staff or during rush periods, banquets or any social function. 12.Manage programs and processes to control and reduce loss time injuries, while ensuring the safety and security of employees 13.Promotes positive public relations internally and externally 14.Performs any reasonable, temporarily assigned job duties outside the position’s job description, where, in the Company’s judgment, those duties are necessary in the interest of efficiency, productivity, or guest service. 15.Perform other duties as assigned. Requirements GAMING INDUSTRY EXPERIENCE IS PREFERRED 1.A degree from a certified food service program, apprenticeship, culinary school, or equivalent 2.Ten years (10) of food service experience in a high volume food operation.
