Chicken Lettuce Wraps Ingredients: 1/2 tsp(s) sauce - Hoisin 1/2 tsp(s) sauce - soy (low sodium) 1/4 tsp(s) oil - sesame 1/4 tsp(s) vinegar - rice wine 1/2 tsp(s) sauce - Sriracha chili-garlic 1/2 tsp(s) oil - canola 1/4 tsp(s) garlic - minced 1/4 tsp(s) ginger - minched 1 onion(s) - green (scallions) 4 oz chicken - ground 1/4 pepper(s) - bell (your choice - medium) 1 oz peas - snow 1/2 carrots - large 3 lettuce - butter (leaves) 1 oz almonds - chopped or slivered Directions: 1. For the Sauce: Mix hoisin sauce, soy sauce, sesame oil, rice wine vinegar and sriracha sauce together in a bowl and set aside. 2. Heat canola oil in a skillet over high heat. 3. Add garlic, ginger and green onions to the pan and stir until fragrant. 4. Add ground chicken, breaking it into small pieces until cooked through. 5. Meanwhile, chop bell pepper and snow peas, and shred carrot. 6. Add bell pepper and snow peas and cook for 1 minute. 6. Pour the sauce on top and cook for 2 minutes longer. 7. Serve chicken mixture in lettuce cups with shredded carrots and slivered almonds on top. 8. Tips: 1/4th whole bell pepper = 1/4 cup chopped 1 oz snow peas = 1/4 cup chopped snow peas 1/5 whole carrot = 2 T shredded 1 oz slivered almond = 1/4 cup.
