Christmas dinner! i made turkey, ham with a citrus molasses glaze (taste of home), mashed potatoes and gravy, dressing (allrecipes), corn pudding (allrecipes), carrots with apricot sauce (allrecipes), red curry butternut squash (allrecipes), rice casserole, pumpkin pies, verlys apple pie (taste of home), banana bread, peanut butter fudge, rolls and appetizers! glaze for ham: 1/2 c grapefruit juice 1/2 c orange juice 1/4 c molasses 3 tblsp honey 1 tblsp packed brown sugar 1 tblsp dijon mustard 3 tsp pepper combine juices in saucepan. bring to a boil and cook until reduced by half. stir in remaining ingredients and simmer 12-15 min or until sauce has thickened. dressing: 30 slices white bread set out til hard and crush 2 tblsp butter 1 onion chopped 2 stalks celery chopped 2 eggs beaten 2 c chicken broth (i used vegetable cuz daughter is a vegetarian) 2 tsp sage 1 tsp garlic powder s/p oven 325*. place crumbs in lg bowl. in saucepan heat butter and saute celery and onion until soft. remove from heat and drain. mix eggs and broth into crumbs. should be moist but not mushy. mix in onion mixture. place in baking dish and bake 1 hr. corn pudding: 5 eggs 1/3 c butter 1/4 c sugar 1/2 c milk 4 tblsp cornstarch 1 can corn drained 2 cans cream of corn oven to 400*. grease 2 qt baking dish. beat eggs then add butter, milk and sugar. whisk in cornstarch. add corn and mix well. pour into baking dish and bake for 1 hr. carrots with apricot sauce: 1-16 oz pkg baby carrots 1 c water 1 c apricot preserves 2 tblsp cornstarch 1/4 c dried apricots (i used 1/2 c) 1/4 c golden raisins (i used 1/2 c) oven to 325*. boil carrots until tender. stir together preserves, cornstarch, apricots and raisins in saucepan. cook over med heat until sauce thickens. pour sauce into carrots. pour into baking dish and bake 15 min. squash: 1 bunch green onions chopped 1 tblsp veg oil 2 tblsp tomato paste 1 tblsp red curry powder 1 tsp cumin 1 tsp red curry paste 3 clove garlic crushed 1-14 oz can coconut milk 3 tblsp fish sauce 1 1/2 tblsp packed brown sugar 1-3 lb squash peeled seeded and cubed saute onions in veg oil. add tomato paste, curry powder, cumin, curry paste and garlic. stir in coconut milk, fish sauce and brown sugar. simmer sauce 10 min. add squash and cook until tender (around 20-30 min). apple pie: 1-15 oz pkg refrigerated pie crusts (2 crusts) 3 1/2 tblsp flour 1 tsp sugar for crust plus 2/3 c for filling 3 1/2 lbs mixed apples peeled and cut into thin slices 1 tsp cinnamon 2 tblsp butter cubed preheat oven to 425*. roll out 1 crust on lightly floured surface. move to fit 9 pie plate leaving 1 overhang. stir together 1 1/2 tblsp flour and 1 tsp sugar then sprinkle over crust. mound apples in crust. it should be full as they will shrink during cooking. stir together remaining sugar, 2 tblsp flour and cinnamon. sprinkle over apples. dot tops with butter. brush crust overhang with water. roll remaining crust out onto lightly floured surface. lay across pie. tuck overhang under bottom crust to seal. crimp edges with fork. cut 3-5 steam vents in top of crust. bake 15 min at 425* then reduce heat to 325* and bake for an hour.
