Cooking with good local food is easy and fun. Andrew often requests a couple sunny-side up eggs in the morning. He knows that our pasture-raised eggs are packed full of nutrition and give him power to begin a full day of kindergarten and to keep him fueled until lunchtime. One of his favorite dinners is so simple. A pack of bratwurst thaws quickly, goes into the broiler and cooks up in no time. Meanwhile, rice is prepared and an onion and a sweet bell pepper are sautéed, with a chopped garlic clove thrown in at the end. Served over top of rice this treat makes a talkative fellow pipe down for a blessed few minutes. What about pork chops? Ours are cut 2 thick. Slabs of pork loin. Yesterday afternoon I put 2 chops, still frozen, into our beloved Le Creuset dutch oven. About two cups of red wine and water, salt and pepper and a large handful of fresh herbs (sage, rosemary, thyme), a chopped onion and 2 garlic cloves took very little prep time. I brought the pot to a simmer, cut it back on low and covered for four hours. Removing the meat from the pan, I crushed the garlic cloves and strained the juices into a small sauce pan. We like to use arrowroot powder as a thickener for sauces and always add some butter to the sauce. Served with brown rice or noodles, fresh greens or roasted root vegetables- easy and succulent! We will be preparing a grass-fed beef roast soon in the same fashion, with baked potatoes. How about that bountiful harvest of garden tomatoes? Spaghetti time, with lots of fresh basil in the sauce and chunks of sweet italian sausage and ground pork. Wow, just wow. Chicken to roast? Uh-oh. We are out of that until the end of October. Sorry! It will be a great time to, er, stock up! With Fall around the corner its time to think about the Thanksgiving feast. If our fresh turkey has become your familys tradition, get an order in sooner than later. Problems at the hatchery created a shortage for us this year. So many meal options, simple and delightful, are right here at the farm. Taste and see how real local food is truly the best.
