Crawfish Au Gratin ½ cup chopped green onions 3 stalks of celery chopped 8ozs of butter 4 tbsp plain flour 1 regular size can of Carnation Evaporated milk 2lbs crawfish tail meat 2 egg yolks 2 tbsp sherry Seafood seasoning 2&1/2 cups shredded cheddar cheese ½ cup shredded parmesan cheese Sauté onion and celery in butter until soft… Add flour and blend well, add milk stir well… Remove from heat, and add remaining ingredients except cheeses… Pour into casserole dish… Top with cheddar cheese, then sprinkle parmesan cheese on top… Bake at 350* for 15 minutes…
