Easy-peasy simple cheese cake.... 1 punnet of strawberries well washed, green tops removed. 1 1/2 cups preservative free ricotta cheese 1 tsp organic vanilla bean paste 1 tbsp gelatin powder 1/2 cup water Add gelatin to cold water and heat a little to dissolve. Set to one side to cool. Place the cheese, vanilla and strawberries into a blender and process until combined. When cool, add gelatin mix to food processor with other ingredients and mix well. Pour into 4 small ramekins and place in the fridge overnight to set. Too easy, no rubbish and minimal sugars :) Mel
