Epic level cheese tasting tonight - after receiving so much cheese for my birthday... (special thanks to Andy!!!) Barbers cheddar (English reserve 20 months) Hard, with crystals, semi sharp and creamy - very delicious ! Istara (Petit basque) Soft,mild, warm... a bit nutty. Very good... unusual undertones... Mimolette I was very intrigued by the color (see below!) and the history: It was originally made by the request of Louis XIV, who - in the context of Jean-Baptiste Colberts mercantilistic policies - was looking for a native French product to replace the then very popular Edam. To make it distinct from Edam he seasoned it with annatto to give it a sweet and nutty flavour and a distinct orange colour. Very had, but wonderful! Not too sharp or nutty... very nice...also seems to be very controversial! In April 2013, the Food and Drug Administration blocked imports of mimolette to the United States. Cheese was deemed unfit for consumption by the United States Customs and 3,800 pounds of cheese was ordered to be destroyed.[2] The FDA refusal report stated that The article appears to consist in whole or in part of a filthy, putrid, or decomposed substance or be otherwise unfit for food Manchego (El trigal - 6 months) Wonderful! Semi firm - almost granular texture. Semi sharp, a bit creamy. Kaltbach (Cave aged gruyere - Single source) The Cave-aged Gruyere is matured for about one year in the secluded caves of Kaltbach near Lucerne in Switzerland. In the cool and humid air of these sandstone caves;the gourmet cheeses develop a dense texture with small salt crystals. It had a few crystals, and it was very sharp, with a Strong flavor, that was almost smokey - might be my favorite of the evening... #cheesetasting
