Fancy a nice healthy delicious Mushroom Stroganoff for dinner? How to make it: 3 to 4 large Portobello mushrooms 4 other mushrooms ½ cup of minced shallots or onions bunch of chopped parsley squeeze of lemon or lime Take the stems from the large Portobello mushrooms & slice them, sprinkle with squeezed lemon juice. Finely chop the other mushrooms, shallots, parsley & mix these to the sliced mushrooms, cover & set aside. To make the stroganoff sauce 1 recipe of nut sauce (1/ 2 cups full cashew / macadamia nuts to 2 cups water) 1 x tablespoon olive oil 1 mushroom ½ cup of fresh tarragon 1 garlic clove 2 teaspoons of tamari seasoning Add all the above to your processor or blender & blend into a creamy sauce – then add to the mushrooms, mix in by using your hands to really squeeze & marinade / tenderize the mushrooms Place this dish in refrigerator to absorb all the flavours before serving.
