In our fermented foods workshop you will learn to make, Kombucha Sourdough, Sauerkraut, Kim chi, Lacto Fermented Tomato Sauce, Milk and Water kefir, Seasonal Preserves Communities and households in most parts of the world have practised some sort of fermentation, it was part of their regular routine of making food, and these traditions were passed on from generation to generation. But during the 20th century, with the rise of “hygienic” modern kitchens and “clean” processed foods – and a general popular association of the word “bacteria” with disease and death and danger – many people grew suspicious of live culture food production, and fermentation became seen as a specialist activity – “as something that someone else does”. With our renewed interest in food, however, and our desire to understand where our food comes from and how it’s made, more and more people are keen to overcome the modern fear of bacteria and rediscover home fermenting traditions.
