Following on from my threads on Vit K and B12 in seaweeds, I have a question for the group. What is the most efficient way of cooking or processing seaweed to get the best out of it regards nutrients. Another way of wording this might be- how accessible, digestible, extractable is seaweed for its nutrients... so far Ive used it for soups ( water based ), stir-frys ( oil ), and baked into oatcakes ( combo of oil and water ). Its ok to have a lovely wild sea vegetable with all that goodness, but would be interesting to have some scientific back-up or info regards nutrient accessibility !
