For anyone watching Recipes to Riches and wants to know the low fat banana bread recipe... Here it is! :-) David Bryants Low Fat Banana Bread Recipe from the Australian Recipes to Riches TV Show Makes 1 Loaf ½ cup raw sugar 2 eggs 5 medium ripe bananas, sliced 200 gm no fat yoghurt 250 gm wholemeal self-raising flour 1 tsp cinnamon 1tsp baking powder 100g dates, chopped 100g walnuts, chopped 1. Preheat the oven to 180°C. Grease (with cooking spray) and line an 11 cm x 21 cm loaf tin with baking paper. 2. Using an electric beater, cream the eggs and sugar until light. Add the sliced bananas one at a time, beating well after each addition. 3. Stir in the yoghurt. Fold through egg mixture. 4. Sift flour and cinnamon spice into mixture. (1 tsp of baking powder also helps) 5. Fold through dates and walnuts gently. 6. Spoon into prepared loaf tin and bake for 30-40 minutes, or until a skewer inserted comes out clean. 7. Remove from oven. Allow to cool in the tin for 5 minutes before turning out onto a wire rack. Tip: keep your bread in an airtight container, and it should stay fresh for 3-4 days. Love this banana bread for breakfast, toasted and topped with a scrape of your favourite spread, low fat vanilla yoghurt or cottage cheese.
