For those who dont have a rice cooker I have a recipe I use to cook rice on the stove top. First rule is the rice to water ratio. 1:2 or 1 cup rice add 2 cups water. Second rule (its more of a guideline really) is 1/2 cup dry rice = one serving. So, if you just want rice for one use only about 1/2 cup of rice. Be sure to share this recipe and save it on your wall. (or you can print it out and add it to your collection.) If you use Evernote or OneNote they are great tools for clipping and saving recipes. Stove Top Rice (Serves 2-3) Equipment needed: 1 measuring cup, spoon, pan, lid for the pan. Be sure the lid fits on the pan. If it is too large you will get a mess on the stove from the steam of the rice cooking. Ingredients: 1 cup white rice 2 cups water 1/4 to 1/2 teaspoon salt. You can leave out the salt if you are on a salt restricted diet. 1 tablespoon butter (optional) Note: Rice expands as it cooks so be sure to use a pan that will accommodate the fact that your rice will double in volume as it cooks. 1. Rinse your rice off. This is especially a good idea if you buy rice from the bulk bins. 2. place the rice, salt, and the water in your pan and cover the pan. 3. On a medium high heat bring your water to a boil. This should take about 5 minutes. 4. Once the water starts boiling turn the heat down to low and stir the rice once or twice. Make sure the heat is low enough that the rice simmers gently. Cover the pan with lid and set your timer for 20 minutes. Dont give in to the urge to peak while the rice is cooking. You want to keep steam trapped in the pan to cook the rice properly. 5. remove from the heat after 20 minutes and let it sit for a minute or two. Fluff the rice with a fork and stir in the butter if you want to give your rice a nice rich buttery taste. 6. Serve and enjoy! Note: brown rice and wild rice take longer to cook. For brown rice add about 10 minutes to the simmer time. For wild rice add about 15 more minutes. The recipe I use creates slightly sticky rice. If you want your rice firmer and not sticky reduce the cooking time by about 3-5 minutes. If you want good sticky rice add 1/8 cup additional water and simmer white rice approximately 25 minutes.
