For those who have a sudden glut of zucchini, this is a yummy way to use it! ZUCCHINI-PINEAPPLE BREAD nonstick cooking spray 5 eggs 1 1/4 cups canola oil 2 1/2 cups sugar 1 tablespoon vanilla extract 3 1/2 cups all-purpose flour 1 cup ground flaxseed 1 tablespoon baking soda 1/2 teaspoon baking powder 1 teaspoon cinnamon 1 teaspoon nutmeg ( freshly grated is best) 1 cup drained, crushed pineapple 3 cups shredded zucchini Preheat oven to 350. Spray 3 (9x5x3-inch) loaf pans with nonstick spray. Beat eggs until lemon in color...add oil slowly; beat until combined. Add sugar and vanilla; beat until combined. Combine dry ingredients, mixing well. Add to egg mix, mixing well. Add pineapple; stir. Add zucchini; mix well. Pour into pans. Bake 1 hour, or until a wooden pick inserted in center comes out clean. Cool completely on wire rack. These freeze well.
