Fourteen years ago I started an international food project. The idea was to cook the most representative food from each cuisine and little by little explore them all. Ive finally accepted that its not going to happen. Ive done it alphabetically, and in 14 years Ive only reached G. Be that as it may, its been fun. I started by doing a full menu, which worked great for dinner parties. Those disappeared from my life when I had kids, so now I try several dishes as weeknight dinners. Its slow, but so far Ive explored 112+ cuisines and discovered some amazing dishes. My country-by-country explorations are at the link below. The cuisines I finished most recently are Gambian, Garifuna and Emilian-Romagnan (sometimes I go back in the alphabet when I realize Ive skipped a cuisine). This week Ill be hopefully making desserts from Gabon (baked bananas) and Friuli (strucolo), as well as main dishes from Greece, Goa and the Baghdadi Jewish community in Calcutta. Let me know if youd like me to share with you the cuisines as I finish them - or if you have any dishes from any G or H cuisine to share (cant imagine Ill get beyond that this year).
