Galouti Kebabs with homemade Sheermal (the sheermal is vegetarian and can be enjoyed with vegetarian kebabs) Recipe links: soulandspicebox/galouti-kebab/ soulandspicebox/sheermal/ According to folklore, the 18th century ruler of Lucknow, nawab Asaf-Ud-Dowlah, had commissioned his khansama (cook) to make a succulent, soft kebab which could be eaten without teeth. The nawab had lost his teeth but his taste buds and appetite were still thriving and he wanted to enjoy the kebabs without having to chew much. The khansama ran helter skelter to fullfill the wishes of the nawab and came up with this version of kebabs which are designed to literally melt in your mouth. Imagine, the look on the nawabs face when he would have tasted the kebabs for the first time. I am pretty sure he would have done a little jig and given a toothless grin!! The toothless grin of the Nawab reminds me of my favorite animated character Toothless from How to train your dragon! Hahaha! Isnt he the cutest thing !!! I can watch this movie a million times just to see him! Coming back to the kebabs, this is a modified version of the Galouti Kebab recipe given by Chef Sultan of Maurya Sheraton. I modified certain ingredients with what I had at hand and added a few more which I thought would work well. They say, in the original recipe made in Lucknow there were about a 100 spices and ingredients which were used! I sincerely wish that someday I can get a hold of that recipe created for the toothless Nawab. Till then, I will keep coming back to this recipe every time I crave a nawabi delicacy with homemade sheermal!
