Gardens are starting to pop in my neck of the woods. When they do, the produce is abundant. Right now I have Chinese peas, green beans and bell peppers. Pretty soon the squash and zucchini will be abundant. CONFESSION: Im not a Zucchini fan....but am willing to try the following recipe. Give it a whirl and let me know what you think. Ill do the same here. ZUPPA DU ZUCCHINE Ingredients: 2 Tbs. unsalted butter 1 Onion sliced or chopped 1 lb. Zucchini sliced thin 1 qt water 1 1/2 Chicken Bouillon cubes dissolved in 1 qt of water or 2 c. of Chicken Broth in box 2-3 basil leaves or 1 tsp. apprx. of dried basil salt and paper to taste Melt butter, add chopped/sliced onions and saute at medium heat until opaque. Add sliced zucchini and stir all together for a few minutes. Add the diluted chicken bouillon or boxed chicken broth. Bring to boil, cover, and then reduce to simmer add basil, fresh or dried and simmer for 20 min. Remove basil leave if you prefer. Puree this mass either in blender or puree stick until it becomes a creamy consistency. Serve this bisque with grated cheese, and plain baguette, or if you prefer with crostini (toast sliced baguette on one side and spread butter on other side and sprinkle w/parmesan cheese place under broiler cheese side up until golden brown. This soup - Im told - freezes well. Buon Appetito!
