Good Guy Gregs ultra-moist Banana Cake Recipe: i. 250g Butter (the better quality you use the yummier your cake will be- Lurpak is the best imo) ii. 80g caster suger (healthier choice, if you want it sweeter put 100g) iii. 250g self-raising flour iv. 4 large eggs v. 1 small tub i think its~ 250g plain natural yoghurt(better) or sour cream vi. 4 large del monte Bananas or 6 smaller sized pisang rajas mashed up with a fork (leave some chunky bits for texture, dont puree and massacre the bananas too much) vii. Chopped toasted hazelnuts as toppings (optional) viii. Strawberry or mixed berries Jam as a glaze (optional) Instructions: Preheat oven to 160 deg celcius on fan mode 1. Cream butter and sugar till slightly whiter than yellow/ light and fluffy(if you use good butter like Lurpak) in stand mixer or with a whisk 2. Put in all the eggs, mashed up bananas, yoghurt/sour cream and continue mixing till evenly combined 3. Fold in the flour, dont beat out all the air (this step is crucial to allow the cake to rise nicely. That said, dont worry too much since there are leavening agents in the self raising flour) 4. Pour into a baking tin (round or rectangular up to you) 5. Put the cake into the oven and SEAL IT SHUT :) 6. Bake in oven until the top is brown and inside is cooked.. approximately 35-40mins but depending on your oven.. 7. To test if it is cooked, insert a chopstick or satay skewer into the cake.. it should come out clean. 8. *optional* glaze the top with jam and sprinkle chopped nuts over it. Useful tip: if the top is too brown, to prevent it from turning too black or burning, cover the cake tin with a piece of baking paper, A4 size paper, newspaper or aluminium foil.. This is my own recipe improvised from several sources and inspired from my Aunt Jeanette.. the useful tip if memory serves me right was given to me by my Grandaunt Florence. Many who have tried it before asked for this recipe. So heres it! Enjoy :)
