Good Morning HartsSpace Healthy Challengers!! Todays goal is Meatless Monday. This is no easy task so this is worth FIVE POINTS!! Meatless Monday is a global movement in 36 countries across the world aimed at maximizing health benefits of a vegetarian diet one day a week. A vegetarian day (or a vegetarian diet) maximizes plant foods which means that PLENTY of fiber, vitamins, minerals, phytonutrients/ antioxidants will be consumed. When we eat a diet or a meal rich in those healthy compounds we are setting our body up for success to preform well and to prevent inflammatory diseases like diabetes, heart disease, and arthritis. Whats more a meatless diet (or day) is less expensive, easier to cook often times, and with little worry over food safety since there is no raw meat involved :) The parameters for today...Milk and Eggs are fine as is butter and dairy in general but do not eat any animal flesh of any kind (including fish). For lunch have a sandwich with some kind of beans or hummus. If you go out to eat today asian and mexican food tends to be good pics for a meat free day. And check out this website as a great source of recipes and meal ideas.
