Grammas Date Squares These classic sweet treats are so delicious and are a big part of my holiday baking, but recently Ive been having a hankering for them to go with my coffee as an afternoon snack :) My Gramma used to make all kinds of goodies when we visited and these were one of my favorites!! I dug out her recipe which was in an old tin and written on paper :) #datesquares Makes an 8x8 pan 1 1/2 cups rolled oats 1 1/2 cups flour 1 cup packed brown sugar Pinch salt 1 tsp baking soda 3/4 cup butter, softened at room temp 3 cups pitted dates chopped up 1 cup water 1/3 cup packed brown sugar 1 tbsp lemon juice For the crumble crust and topping - In a large bowl mix the dry ingredients together. Using a pastry cutter or 2 knives, cut in the butter to the dry mixture until it resembles very coarse crumble. Gently press half the crumble into the bottom of a lightly sprayed/greased 8x8 pan. Set aside For the date filling - Place the dates and sugar in a heavy saucepan and add the water. Bring to a gentle boil over medium heat and stir until thickened. Take off the heat and stir in the lemon juice. Pour the warm filling over the crumble crust. Sprinkle the remaining crumble over the date filling and gently pat down. Or you can leave as a crumbly topping. Bake in a preheated 350 oven for 25 minutes until crumble topping is golden. Let cool on counter for at least 2 hours before cutting. **BLC Tip** - I had some whole almonds so I made 2 pans, 1 of them regular date sq and the other I added in 1/2 cup finely chopped almonds to the crumble mix. In the pics the one on top has the almonds and the regular is on the bottom. Fantastic dessert squares to add to a potluck goodie tray or to serve at a tea or club meeting!!! Very popular at holiday times and especially at Christmas as part of my gift bags :)
