Green Tomato Pie 6 cups of sliced green tomatoes Boiling water 1 cup sugar ¼ teaspoon salt 3 tablespoons flour ¼ teaspoon ground nutmeg ¼ teaspoon cinnamon Small pinch ground cloves Grated rind and juice of 1 lemon 2 tablespoons butter or margarine Pastry for 2-crust 9-inch pie 1 Wash tomatoes; do not peel. Slice 1/8 inch thick into bowl. Pour on boiling water to cover; let stand 3 minutes. Drain. 2 In a small bowl combine sugar, salt, flour, and spices. Combine lemon juice and rind in another bowl. 3 Fill pastry-lined dish with layers of green tomatoes, sprinkling each layer with sugar mixture, dots of butter, and small amounts of lemon mixture. 4. When pan is filled, arrange pastry strips in lattice pattern over filling. Moisten edges to seal and flute or press together with a fork. 5. Bake in a 450 degree oven for 8 to 10 minutes. Then reduce heat to 375 degrees and bake until tomatoes are tender, about 40 minutes. Remove to wire rack to cool My wife made this pie many year ago and I offered it to my mother-in-law and her sister telling her that it was apple pie. She said it was the best apple pie that she had ever eaten. She would not believe me that it was green tomato pie. I gave her another piece and showed her the tomato seeds. Only then did she believe me. She was amazed.
