Guanimos con Bacalao Guanimes: Ingredients: 1 ¼ cup of all purpose flour 2 cup of cornmeal 4 cups of water to boil 1 teaspoon of salt 1 teaspoon of olive oil Directions: In a medium sauce pan boil the four cups of water. Once water is boiling, add some salt and two tbsp olive oil. To make the guanime, slowly add warm water to the flour mix until you start creating the dough that has a consistency to make dough balls in your hands. Start by making a ball about the size of a lime, and then start rolling it in your hands to start giving them that cigar shape. Put the guanimes in the boling water. Cook the guanimes 10 to 15 minutes depending on the thickness. Once the gaunimes are cooked, put 5 guanimes in a plate and put the bacalo over it. Bacalo: Ingredients: 2-3 lbs cod fish, fresh or salted, flaked 4 large onions, sliced 6 medium tomatoes, chopped 1 green pepper, sliced 4 oz of tomato sauce 3 tablespoon of olive oil 2 tablespoons of sofrito 1 packet sazon with achiote ½ teaspoon of black pepper 1 teaspoon of adobo 1 teaspoon of garlic powder of minced garlic ½ teaspoon of oregano Directions Heat 1 tbsp olive oil in in a large skillet. Add sliced onions and green peppers. Cook until onions are tender. Add tomatoes and remainder off olive oil. Cook for 5 minutes. Mix in remaining ingredients. Bring to a simmer, cover, and let simmer for 10-15 minutes. If salt dried bacalao is being used make sure you let it soak overnight to remove the excess salt or put in.
