HAPPY NATIONAL PIE DAY! ENJOY THIS EASY RECIPE Chocolate Almond Macaroon Pie Makes 1 9 Pie (12 servings) Ingredients 8-10 Coconuts Macaroon Cookies (recipe below) ½ cup Flanigan Farms Chopped Almonds 1 cup heavy cream 16 oz good-quality semisweet chocolate chips 2 Tbsp orange zest (divided) Optional: fresh strawberries, raspberries or kiwi slices. Directions Press 8-10 coconuts macaroon cookies into the bottom of a 9 spring-form pan, forming about a ½ thick crust. Sprinkle ¼ cup of the Chopped Almonds on top of the flattened cookie crust. In a heatproof bowl, combine chocolate chips and 1 tsp of the grated orange. Set aside. In a saucepan, bring heavy cream to a boil. Pour the cream over the chocolate chips and stir until chocolate chips are completely melted and the mixture is glassy smooth. Immediately pour into the spring-form pan. Smooth the chocolate until it is level in the pan. Sprinkle the remaining ¼ cu p of chopped almonds and orange zest on top. Refrigerate 4-6 hours before serving. Serving Suggestions: Add fresh strawberries, raspberries or patted-dry kiwi slices. A little vanilla bean ice cream is nice too! Coconut Macaroon Cookies Makes 24 servings (24 cookies) (You will need 8-10 cookies for the pie crust). This recipe is a modification of our Easy Almond Macaroon Cookies. For the pie crust purpose, we eliminated the sliced almonds from original recipe (because we add chopped almonds to the bottom layer of the pie crust) and switched the lemon zest to orange zest. Ingredients 1 14-ounce package sweetened shredded cocoanut ¾ cup of sugar 1 teaspoon grated orange zest ¼ tsp of salt 4 large egg whites Directions 1. Heat oven to 325ºF. Line 2 baking sheets with parchment paper. 2. In a large bowl, combine the coconut, almonds, sugar, lemon zest and salt. Stir in the egg whites. 3. Drop mounds of the mixture (each equal to 2 tablespoons) onto the prepared baking sheets. 4. Bake, switching the sheets halfway through, until the edges begin to brown (20 - 25 minutes).
