HISTORIC FOOD FOR THOUGHT: 11-3-13 Saint Hubert whose feast day is November 3, was a great lord of Merovingian France, a worldling who gave himself entirely to the pomps and vanities of terrestrial existence until, one Good Friday, he underwent a miraculous conversion. He was hunting that day, and taking aim at a great stag, he perceived a crucifix between its antlers. Recognizing this as a sign from heaven, he immediately mended his ways and took up a pious way of life which eventually led to his being elected Bishop of Liege, in Belgium. Because of this legend, the name of Saint Hubert is inextricably associated with hunting, and, in gastronomy, with the eating of game. Virtually anything shot or snared may be eaten in Saint Huberts name; the non-hunter may celebrate his memory with something vaguely gamey from the butcher shop, such as rabbit.
