HOT and SOUR CHICKEN I was on a red chili spree this weekend. I love hot food. The heat just adds to the flavour of the food for me. And if its accompanied with a slight sweetness or sourness it’s a dance session for your taste buds! So hot and sour chicken was next on the cooking list. Here’s what you need – 500 grams chicken (boneless) 1 tablespoon garlic paste 1 teaspoon red chili flakes 1 teaspoon dried basil 1 tablespoon tamarind paste 4-5 tablespoons tomato ketchup Salt to taste Red chili powder to taste In a pan add a splash of oil and add the chili flakes and basil and fry for half a minute before adding the garlic paste. Fry lightly for another half minute stirring continuously. Add the chicken pieces and fry on medium heat till the chicken turns white. Add the tamarind paste, tomato ketchup, salt and red chili powder and fry with a little water till the chicken is cooked. You may make the chicken dry or leave a little gravy as desired. For vegetarians, you may substitute the chicken with paneer, tofu or boiled baby potatoes. You may even try this sauce with a mix of vegetables like cauliflower, broccoli, baby corn and carrots to make a kind of hot and sour stir fry! :D
