Had these Honey Glazed Chicken and Bacon Rolls at a friends house recently, I asked her for the recipe to share & shes just sent it through to me, they are really lovely. Im going to make them as a starter for a valentines dinner Im planning. You will need; 450g chicken breast fillets, 20 slices streaky bacon, 3 tbsp honey, 2 tsp coarse mustard, 1 tbsp fresh lemon juice, oven dish/tray (can line with foil if required). Pre heat oven to 220C/425F/Gas Mark 7. Cut the chicken fillets into thin strips (she says about a fingers width). Mix honey & mustard together in a bowl & add lemon juice, stir well. Wrap the bacon around the chicken strips & place them in the oven dish. Coat the rolls with half the sauce & pop in the oven for approx 12-14 minutes, then remove, turn the rolls over & coat them with the other half of the sauce & return to oven for a further 12-14 mins or until cooked.
