Healthy Homemade Granola I do everything as low fat, low sugar and low salt as I possibly can. You can modify as you please and it turns out delicious any way you may modify it. Here goes: Spray cookie sheet with cooking spray if you dont have a silicone mat. (I use my silicone cooking mat to avoid the PAM spray chemicals) 3 cups old-fashioned oats (make sure they are old fashioned – they are bigger oats) 1 & 1/2 cup chopped nuts of your choice (I used almonds and walnuts) 1/2 cup maple syrup (I used sugar free maple flavor pancake syrup) 1/4 tsp salt (I omitted this) 1 teaspoon cinnamon (I heap it!) 1/2 cup dried fruit (I used a mix of raisins and cranberries or dried berries, any kind) then I sprinkled in a good amount of Flax seed 2/3 cup Splenda brown sugar ½ cup reduced fat peanut butter I added ½ cup raw unsalted peanuts (The nuts up the protein content) Preheat oven to 300 degrees and bake on cookie sheet for 30 minutes. Let cool. It hardens when cool. Then break it up by hand into bite size pieces or crumble smaller if desired. Store in small Zip lock bags in the freezer since no preservatives are in it. I measure out 1/2 cup per small zip lock bag and then I can grab a bag to put on my oatmeal or just to eat as a snack or add to my yougurt! Enjoy! In the Fall you can add pumpkin pie spice and you can modify the flavors, nuts, and dried fruit as desired.
