Healthy Weekend Recipe! Jamaican Jerk Chicken! So if you know me all then you know I like to eat but I also am extremely lazy in the kitchen! Here is an easy recipe that a friend shared with me a while back for some great Jamaican Jerk Chicken! What You Need 1/4 Cup White Wine Vinegar 1 TBSP Minced Fresh Ginger 4 Garlic Cloves, Minced 2 Jalapeno Peppers, Minced 1 TBSP Brown Sugar 1 TBSP Coconut Oil 1 TBSP Ground allspice 1 TSP Salt 2lbs Chicken Thighs How To Make It 1. In a bowl, mix all the ingredients except the chicken. Then dump the chicken in and mix it all up! Helps to work the rub under the chicken to really get some great flavors. In a perfect world you would let this sit and marinade in the fridge for an hour or more but I just ended up cooking it right away and it still tasted great! 2. Heat a grill pan on medium and cook it up! Would be even better on a real grill I bet! Serve it up with some grilled veggies and some sliced avocado and you got yourself an amazing island meal!
