Here in states diner rolls are on a sweeter end . Whenever I made PAv bhaji or vada pav it was a big time taste killer for me.. So started baking these soft fluffy beauties since more than 6 years now .. Whenever bhaji or vadas are on d menu .. It has to be accompanied with home made pavs.. There are many recipes for the same available .. This is what I have been using since years .. Works for me every time :) PAv Ingredients 4 cups all purpose flour .. 3.5 cup initially and other half cup as and when needed to knead to reach right consistency 1 sachet- instant dry yeast 1/2 cup lukewarm water 3/4 to 1 cup lukewarm milk 3/4 tsp salt 2 tbsp sugar 4 tbsp oil and more for coating Some melted butter to brush later Procedure Add the sugar & yeast to luke warm water & stir. Keep it aside & let it froth up (approximately 10mins). Once the yeast froths up, add milk with oil & salt to it. Mix. Next add 1 cup of flour at a time & mix to form a sticky dough. It will be really sticky at first but after some kneading and patience everything will come together . Dust a clean surface with some generous amount of flour & knead till you get a smooth & soft dough (approximately 5-10mins) . Transfer this smooth dough into a large bowl greased with oil so that it has enough space to rise and doesnt stick.Cover with plastic wrap & let it rise for 1 hour. preferably keep this dough in warm area (I used the oven space). After an hour, the dough will double & rise, give it a nice punch to remove all the air & do a quick knead. Spray or grease a baking dish with some oil and dust with flour . Roll the dough into a thick circle & divide into 12 -15 equal parts. Roll each part into a smooth ball & place it on the greased baking dish creased side down. Place all the balls at 1 distance as they will rise & spread. Again cover & let them rise for 45 mins. Preheat the oven to 450deg f. After 45 -1 hr the PAv will double its size and will be sticking to each other. Brush it with some milk. Bake for 12-15 mins. Mine bakes at 13-14 mins.. Bake until u see golden brown color on top.. Dont over bake .pav will be hard to touch initially.. But softens as it cools. Remove from oven brush with melted butter & after 10-15 mins transfer to a cooling rack.
