Here is our favorite breakfast recipe: Poached Eggs with Avocado and Tomato Mix Ingredients * 4 eggs – organic * 2 medium tomatoes, diced * 1 avocado, diced * 1 small shallot, diced * 1/2 lemon – juiced * 1/2 tsp. curry powder * 1/4 tsp. garlic powder or 1 clove of fresh garlic, chopped * Olive oil * Salt and pepper (can be cayenne) to taste Preparation * Bring a pot of water to a roaring boil and low the heat to let simmer * Break the eggs individually into a small bowl * Add olive oil to the water and drop the eggs into it one by one * Once the egg white is firm, remove from the pot gently and let it dry * Season with salt and pepper to-taste * In a separate bowl, mix the rest of the ingredients * Serve over the poached egg on a whole wheat toast
