Heres the recipe for sticky toffee pudding :-) Sticky toffee pudding recipe :-) Makes 8 small individual pudding tins :-) For the sponge- Brown sugar- 100g Soft butter-75g Self raising flour-200g 2tbsp golden syrup 2 eggs Half a vanilla pod (so much nicer than essence) 200g dates (medjool dates are ever so yummy) 300ml water For the toffee sauce- 80g brown sugar 100g butter 300ml double cream -Pre heat the oven on 160c, grease the individual tins with softened butter and sprinkle with flour (lightly, easier to use a flour duster) -Use a mixer, and mix the 100g brown sugar and 75g butter for about 5 mins till creamy, add the golden syrup, vanilla pods and 2 eggs and mix on a slower speed for 30 seconds (if you mix too much the air in the mixture will disappear and the cake with end up dense and flat) -Sieve the 200g flour into the mixture and then hand fold using a metal spoon till the flour is combined, again not for too long. -Chop and deseed the 200g dates and pop them into a sauce pan with the 300ml water and bring to the boil - keep mixing the mixture so it doesnt burn. once the mixture has come to the boil put the mixture into a blender and blend till its a smooth puree. -whilst its warm add this puree to the flour mixture and hand fold till fully combined. (it may look slightly odd but i promise its yummy) -spoon into the tins and tap down lightly to level the mixture -place the tins on a baking tray and put in the oven for 20/30 mins till golden brown . place a cake tester/knife inside the cake and if the knife comes out clean the cake is cooked. To make the Toffee sauce - put the sugar and water in a pan and mix till a smooth paste, add the cream and simmer till its a thicker consistency Best served hot with some vanilla pod ice-cream (massive fan of vanilla pods) ps- to anyone who makes it and lives near heald green, id LOVE to be a tester :-DD xxx Thank you Hina x
