Hi Guys, This week’s Food of the Week is………………………………….Aubergine (50p, Tesco). Aubergine, although technically a fruit, is used as a vegetable. They are native to South East Asia, but are available worldwide and come in a large variety of colours and sizes. The most popular version of aubergine looks like a large, pear-shaped egg, hence the American name ‘eggplant’. Despite having a large variety of aubergine, they all offer nutritional benefits. Aubergines are particularly high in dietary fibre, which is important for helping to manage blood sugar and insulin levels, whilst helping to keep us fuller for longer. Furthermore, the high fibre content helps to keep the bowels healthy by preventing constipation, diverticulosis and haemorrhoids. The high antioxidant content of aubergines is also a strong nutritional benefit for us all. This is because the antioxidants can help to fight off free radicals and protects the lipid (fat) layers of our cell membranes. These lipid layers are vital for our cells to function properly and protect the cell. They are needed to ensure that nutrients are absorbed in, waste is removed and instructions from messenger molecules are received.
