Honey-rubbed Montasio is almost ready to be drained and set on the press. Finally! I sure hope it is good! I have started a "Cheese Diary" as well, with notes on new cheeses I try and what I did different than the recipe. Since I use raw milk I have to alter the culture and rennet amounts, and in this case I am using all goats milk instead of a blend of goat and cow. This is an alpine cheese, firm yet smooth, with a nutty flavor. The goat milk will add more body and tang to it I think. I will know in about 2 months! How I hate the wait!
