Jalapeno Lime Salmon Burgers You need: High power blender or food processor like a ninja or vitamix 4 wild caught salmon filets skinned - about 6oz each 1/4c almond meal 1T dijon mustard- I use traders joe’s brand 1/2 a lemon juiced 1 lime juiced 1c chopped cilantro 3 cloves of garlic 1/2 a jalapeno with seeds 1 egg 1t sea salt 1/4t black pepper 1/4t celery salt Arugula and spinach mix 4 Compari tomatoes quarterd Balsamic vinegar 1 avacado sliced Combine all the ingredients in your blender. Pulse until it forms a thick paste and is well combined. Heat a skillet with a high heat cooking oil, I used avacado. On Med-Hi heat, take about 1/4c of meat mixture and put in the skillet. It will form into a patty shape. Cook the burgers about 4mins a side covered. They should have a nice crust on them. Let stand on a paper towel to try off any excess oil. Serve on a bed of arugula, and balsamic vinegar. Top with avacado slices, tomatoes, salt and pepper. Sweet Potato Chips 3 med sweet potatoes thinly sliced- I recommend using a mandolin. 1/2c coconut oil Sea salt In a large pot heat coconut oil on Med-Hi heat Add in about 1c of sliced sweet potatoes depending on the size of your pot. Cook covered for about 7mins. Place on paper towels to dry excess oil. Sprinkle with sea salt.
