How often do you eat greens for breakfast? I often include a healthy serve of spinach, kale or zucchini or, in this case, silverbeet. Theres lots of misunderstanding and confusion about #carbs and healthy fats in particular. When we talk about a low-carb diet it should be full of healthy leafy greens and bright coloured veggies - its the refined carbs like muffins, breads and cereals that were talking about reducing. With regards to fats its best to use natural healthy fats such as cold pressed organic virgin olive oil, coconut oil and lard from healthy pastured animals. Forget using sunflower or canola oils - they are a highly sprayed, GMO and pro-inflammatory oils. This breakfast contained LOTS of silverbeet gently sauteed with garlic in a very SMALL amount of lard, free range organic eggs and tomatoes. Very low carb, adequate protein and healthy fats. It kept me going until beyond lunchtime.
