I believe if I had to pick one special point that was instrumental in Gods plan to help me lose all that excess weight & help me get off Insulin shots, it would have to be discovering Jicama! This is found in most grocery stores in the produce section! Its like a potato, or a water chestnut; it has similarities to a turnip, but not the sharp taste! I use it raw & finely diced in egg or chicken salad; it is delicious in a stir fry & maintains that crunchy texture! It is a water vegetable & not starchy & it only has about 50 calories per cup full! It is high in fiber! It is filling, while not adding cholesterol or starch or a lot of calories! I love the taste of this vegetable that is sometimes called a Mexican Potato! I lost 68 pounds over a period of about 1 year by rotating my recipes I have discovered using Jicama! The first & main recipe is for my JICAMA STIR FRY: FIRST INGREDIENTS: 6 to 8 Tablespoons Unsalted butter (melt in Large Non-stick Skillet on low) 1 Large smooth skinned Jicama (peel & dice in ½ inch cubes) 6 stalks celery (chopped finely) 1 to 2 inches of fresh Ginger Root (peeled & diced very finely) 3 or 4 large cloves fresh Garlic (peeled & diced very finely) 1 medium size sweet Onion (peeled & diced in ½ inch pieces) ½ bag small baby carrots (sliced in little thin rounds) Or ½ bag Matchstick Carrots (cut in ½ inch lengths) ½ bag fresh or frozen French Cut Green Beans (Cut in ½ inch pieces) Optional= 2 fresh Broccoli Floret’s (cut in small ½ inch sprigs) ½ each red, yellow, orange & green Bell Peppers (diced in ½ inch pieces) Fresh Asparagus cut up in ½ inch rounds INSTRUCTIONS: Stir First Ingredients into large deep non-stick skillet at medium heat 15 to 20 minutes till onion is transparent. Then turn down heat & stir in Second Ingredients: SECOND INGREDIENTS: 4 Zucchini Squash (cut thin slices with green skin on, 1 inch diameter) 1 large fresh Vine Ripe Tomato (diced in ½ inch cubes & add juice too) INSTRUCTIONS: Now simmer all with lid on about 10 minutes, then turn off burner & add ½ pre-baked boneless skinless chicken breast or 1 thigh per serving (cut in ½ inch cubes). I buy my chicken by the flat & bake it the day I get it for 1 hour at 375 in a broiler pan with foil over top! I always season with Mrs. Dash salt free seasoning & garlic powder! I wash it first with cold water & include enough water in pan to make a nice broth to use in other recipes, too! This will make about 8 servings. Mom & I usually eat a soup bowl full on the day I make this & then I store about 6 more servings in the freezer for future meals, to heat in microwave in serving bowl with lid.
