I dont know about you, but Im always on the look out for quick and delicious #glutenfree #breakfast or #brunch ideas. Heres one I thought Id share with you - french toast waffles. To feed 4-6 youll need: #glutenfree bread 2 eggs 3/4 cup milk of choice (I used vanilla flax milk) sprinkle of cinnamon teaspoon of vanilla tablespoon maple syrup Preheat your waffle iron. Mix the wet ingredients, slice bread of choice (I used #Pikaniks honey sandwich bread). Dip the bread in the mixture until its thoroughly wet but not soggy. Place your dipped bread on the greased waffle iron, close the lid and wait for the magic. If you want to get a little fancy-schmancy, find whatever fruit in your house that might be at the tail end of its lifespan. I used strawberries and blackberries. Wash, chop, add a bit of water (maybe 1/4 - 1/2 cup depending on how much fruit you have). Bring to a boil, turn down to a simmer and once fruit is soft use a potato masher to mush it all up. You can add sweetener if you prefer -- I used about a teaspoon of maple syrup. These are best served right away. Enjoy!
