I finally came up with a really good gluten free bread recipe. Has quite a mix of different flour in it and the texture is more like real bread. Unfortunately I didnt get a picture to post with the recipe - next time :) Whole Grain Gluten Free Bread 3 large eggs lightly beaten (room temp) 1 tsp. apple cider vinegar 1/4 cup vegetable oil (or whatever you like to use) 1-1/3 cup warm milk 1 Tbs. + 1 tsp. honey 3 Tbs. brown sugar 1/2 cup Sweet White Sorghum flour 1/2 cup quinoa flour 1 cup teff flour 1/2 cup tapioca flour 1/2 cup potato Starch 3 tsp. xanthan gum 1-1/2 tsp. salt 1 pkg or 2-1/4 dry active yeast (not quick rise) Optional: 1/4 cup seeds (sunflower, flax, etc.) Dissolve yeast in 1/3 cup warm milk and let soften (3-5 minutes) Put eggs, vinegar, oil, 1 cup milk, honey, and sugar in mixer on low speed for a few seconds until it is all mixed together. Place all dry ingredients (except yeast and seeds) in a bowl and blend it together. Then add to wet ingredients and mix for 2 minutes on medium. Add rest of ingredients and mix 2 more minutes on medium. Place in a well sprayed glass bread pan and let rise in a warm area for 40 minutes. Preheat the oven and bake at 350 degrees for 35 minutes. The bread will continue to rise as it bakes. Remove from oven and let cool.
