I had about ¼ jar of Cajun injector left from shooting up the turkey last week, so I injected it in this wild hog (sow) roast (pieces of roast) last night and sprinkled Tony’s on it. This morning I pulled it out of the Ziploc bag that it was marinating in in the refrigerator and placed garlic, onions and bell pepper in the middle of it, clipping the two large pieces together with clips. I sprinkled a seasoning I received from one of our neighbors (who makes his own for his clients) all in the inside and outside of the roasts. Placed it in the Charbroil Big Easy and it was ready before I knew it. I left it in for 1 hr 45 min, but think it was ready earlier (next time I will keep a closer eye on it after 1 hr). The outside is absolutely crispy and delicious, and the inside is moist and juicy. I have the pan drippings from the bottom tray that I plan on draining and heating up to make gravy.
