I have been asked for the sweet pickle relish recipe my wife uses. Due to my less-than-stellar ability to successfully make a copy of her recipe and post it on FB I have typed it out on a word document and posted it here. HOW TO MAKE SWEET PICKLE RELISH By Heather Schulte, eHow Member Ingredients: 4 Cups shredded cucumbers (I use organic) 1 Tablespoon salt (I use sea salt) 1 Cup chopped onions 1 Tablespoon pickling spice 1 Cup vinegar 1 Cup sugar (I use unrefined) My notes: We use the cucumbers come from the garden and plain granulated sugar. Directions: 1. Shred 4 cups of cucumbers. You do not need to peel the cucumber before shredding. I use the shredding attachment on my food processor. If you are using large cucumbers, cut them lengthwise and scoop out the seed before shredding. Place the shredded cucumbers into a sauce pan or stock pot. 2. Chop 1 cup onion. I use the chopping blade on my food processor. Place the onions into the sauce pan or stock pot with the cucumbers. 3. Add the remaining ingredients. Cook over medium heat, stirring occasionally, until it comes to a slow boil. Turn the heat down to low and allow it to simmer for about 5 minutes. Remove from heat and allow to cool. 4. Using a slotted spoon, place the relish in 6 to 8 oz. jars for canning or freezing. The slotted spoon will allow the excess liquid to drain from the pickle relish Tips & Warnings This recipe can easily be doubled or tripled for making large batches.
