I have just been reminded why I like freezing better than canning. It is 11:30PM and I just got done processing and canning about 40 pounds of apples. Havent even had dinner yet. Urgh my feet and back hurt but its done for now. I still have about twenty pounds left to do tomorrow. On the bright side I have several quarts of apple sauce and apple butter and three quart jars of apple cider vinegar in process :)
