I have just learned of the passing of a great chef and wonderful spirit - Chris LHommedieu. He was 44 years old. We were the same age. We worked at a restaurant called Aqua in San Francisco together back in the day under the leadership of Michael Mina and a line of talents that included James Montejano, Chef Jason Wilson, Samuel Morse, Carl Schroeder, Mark Larusso, Jay Wetzel, Jeff Floyd, Jason Goldberg and many other passionate cooks. He was funny, sarcastic, energetic and philosophical. Chris taught me a lot. He trained me on the restaurants signature Black Mussel Soufflé, wed compare notes on Life (at age 25!) breaking down after service. One of my most favorite memories of him was when Id been at Aqua maybe two weeks and the first family meal we had was LHommedieu making a run to the McDonalds down the alley. He brought back burgers for everyone and it was a rare few minutes we had before service - we were all set to go and wolfing down cheese burgers out the back door of the kitchen. Im thinking, we work at one of the best restaurants in the City and this is what were eating... It was romantic in its own way for that pirate kitchen.
