I havent seen a recipe posted yet, so I am going to post one. This is what we had for dinner Friday night Baked Fish with Fennel, Orange, Carrot, Parsnip, Squash and Red Onion Serves 4 (with leftovers:>) 1 /2 fennel bulb, sliced thin about 1/4 inch 1/2 bag baby carrots, sliced in half 2 parsnips cut into 1/4 inch slices 1 zucchini cut in 3/4 inch slices 1 golden squash cut in 3/4 inch 1 red onion, cut into 8 wedges 1/2 cup orange juice 3 tbls cold-pressed extra virgin coconut oil 1 tbls Plus 1 tsp finely grated orange rind 2 tsp fennel seeds 1 orange (I used Minneola) cut into 8 wedges, after rind is zested 1 &3/4 lbs. firm white fish fillets (I use Cod) 1 tbsp. macadamia oil (optional) Preheat oven to 400 degrees. Combine fennel, carrots, parsnip, onion, squash and 1/4 cup of the orange juice and 2 tablespoon of the coconut oil in a medium baking dish; roast 20 minutes. Rub combined remaining coconut oil, orange rind and fennel seeds all over fish, to season. Remove dish from oven and place fish and insert orange wedges between fish pieces on top of vegetables. Roast about 10 minutes or until fish is cooked as desired and vegetables are browned and tender. Remove from oven and drizzle macadamia oil or 1 tablespoon additional coconut oil. Serve with brown rice and simple salad
