I jave a really simple aubergine pasta recipe: 1 aubergine Garlic 1 red chilli Couple tablespoons fresh chopped parsley Salt n pepper. Cut aubergine into fairly small cubes/chunks, add 2 tblspns olive oil and grill,, keep checking and turning. Fry garlic chilli and add a bit of the parsley. Add tin toms and a bit of water and bubble away. Get your pasta on, wwhen its all ready add the aubergines to the tomato stuff and there you go. One of my fave after work quick dinners.
