I saw a praline recipe that was supposedly a "Cajun" recipe. I am going to show you a North Louisiana Praline Recipe that I know is about 200 years old. From our Elliott or Walworth side. LOUISIANA PRALINES 1 1/2 c BROWN SUGAR 1 CUP SUGAR 1/2 C EVAP MILK 1 TSP VANILLA 2 TBP BUTTER 2 C PECANS - CHOPPED(NOT FINELY) MIX ALL TOGETHER (EXCEPT NUTS) IN HEAVY SAUCEPAN OVER HEAT. STIR CONSTANTLY, COOK UNTIL 238-240 DEGREES (SOFT BALL STAGE) TAKES ABOUT 5 MINUTES ONCE STARTS BUBBLING. ADD NUTS AND THEN BEAT UNTIL THICKENS. DROP BY TEASPOON ON PARCHMENT PAPER.
