I was looking in the fridge/freezer trying to figure out what the heck to make my hubby & I tonight for a rather late dinner. Avoiding all bad carbs…this is what Ive decided: Im going to pound a couple skinless-boneless chicken breasts in a plastic zip bag and sauté with a little olive oil, s & p, and garlic. Ill set chicken aside to slice up later, and do the same with sliced cabbage but being careful not to over cook it (no pounding, lol)-set cabbage aside too. Then, Im going to add sliced mushrooms, and carrots, and sauté with a little reduced soy sauce-no oil this time because there is enough juices in the pan already. Once slightly tender Ill add back the sliced chicken, and the cabbage that is still a little crisp. To add a bunch of last minute flavor Im going to add a little more reduced sodium soy sauce, a drizzle of sesame oil for nutty-ness (yum), and reduced sodium chicken stock if needed for a pasta dish feel. #cabbageissodamngoodforyou #cabbagefeelslikenoodles #thiswashardtowrite
