Im calling this the clean out the kitchen kale salad. I literally used all my veggies that were about to go bad including: Kale, asparagus onions and of course ... garlic (that never has a chance to go bad in this house!) First make the quinoa * Tip - I know many people say that they have tried quinoa and its bland and boring. Well, not when I make it! I add a little olive oil to the water and heavily season it. Tonight I used: Pink salt, pepper, granulated garlic and 3 cloves of diced garlic (I told you I love garlic!). This will totally flavor your quinoa. Next sauté the Kale - which only takes a few minutes on med heat. I used a hefty teaspoon of coconut oil and tore the kale into smaller pieces. I tossed the Kale in the pan to coat it with the coconut oil and let it cook down. I seasoned it with pink salt, pepper and granulated garlic. Youll notice that the Kale will start to cook down and turn a bright green color. This is when you know its done (app 4-5 mins) dont over cook it or it can turn bitter. Put in bowl and put aside. Sautee whatever veggies you want to put in there and throw them in with the kale when done. When the quinoa is done add that and mix your salad. I even toasted some pine nuts and put them in there as well. Mix and enjoy :)
