Im officially off work for the next 2 weeks and am all set for Christmas, except for the grocery shopping, which I started today. When I got home, I needed to make room in my veggie crisper for todays grocery haul, so I thought Id try turning the older veggies in my fridge in to a roasted veggie soup. Ended up with 16 cups of very coarsely chopped up veggies. Tossed them in melted butter, salt, and pepper, and have put them in a 325F oven to roast. Stay tuned...
